Hey Brunch Boos! So, it’s allegedly Fall. I say that because the weather in Dallas has been unpredictable. Only in Dallas can you experience all four seasons within 24 hours. Although sweater weather generally brings to mind comfort foods, I have been getting into Fall salads to balance out all the decadent eating.
My friend put me on to this sweet potato and kale blend. I’ve only found it in Target, in the frozen vegetable section. I suppose you could saute your own kale and roast sweet potatoes, but the way my life is set-up, convenience is the key. The bag goes in the microwave for 5 minutes.
I mix the sweet potato and kale blend to a bag of fresh baby spinach and I add a diced granny smith apple,and more crasins. If you’re vegan you can stop right there and it would still be a great salad. However, I like to add protein so I add grilled shrimp or chicken breast. I lightly seasoned my shrimp with salt, pepper, and garlic powder. If you really want to set it off add herb goat cheese (it’s so good)! If you’re not a fan of goat cheese, gorgonzola or feta goes well with these flavors too. Top with pumpkin seeds and drizzle some balsamic vinaigrette. This is salad is so tasty and can make for a great lunch or light dinner. It would be a nice accompaniment to a bowl of butternut squash soup if you want to expand on the meal.
